Disease caused by toxins produced in food by the growth of microorganisms

Toxins that are destroyed by heating
        Clostridium botulinum

Heat stable toxins
        Produced by bacteria
           Staphylococcus aureus
           Clostridium perfringens
           Bacillus cereus

        Fungi that produce toxins
           Aspergillus flavis
           Ergot
             Ergotism

        Algae that produce toxins
            Marine Toxins
            Ciguatera poisoning
           Dinoflagellates
            Physteria ( Physteria piscicida)

Food borne infections
    Diseases caused by microbe from food growing in the body. There are two groups:
        a) ones that have to grow in the food before it is eaten i.e. need large  infective dosage and
        b) organisms that do not need to grow in the food. i.e. have low infective dosage

Organisms that have to grow in the food before it is eaten

    Bacteria
        Salmonella spp.
       Campylobacter jejuni
         Yersinia enterocolitica and Yersinia pseudotuberculosis
         Vibrio parahaemolyticus and other vibrios
         Listeria
         Escherichia coli -
            Enterotoxigenic (ETEC)
            Enterohemorrhagic
           HUS

Organisms do not have to grow in the food before it is eaten

    Bacteria

        TB
        Brucellosis
        Q-fever

    Viruses
        Hepatitis A
        Polio
